Cake Ingredients

  • 2 cups gluten-free oat flour
  • 1 cup almond flour
  • 1 cup coconut sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla powder or alcohol-free vanilla extract
  • 1⅓ cup unsweetened almond milk
  • ⅓ cup unsweetened apple sauce

“Mascarpone” Cream

  • 2½ cups cashews, soaked 1 hour in hot water
  • 1 cup coconut cream
  • ½ cup maple syrup
  • 1 tsp vanilla powder or alcohol-free vanilla extract
  • 3 tbsp freshly squeezed lemon juice

Soaking

  • ½ tsp chaga
  • ½ cup hot water

Topping

  • 2 tbsp carob powder
  • ½ tsp chaga

Directions

  1. Preheat oven to 350°F/180°C. Line two 9-inch brownie pans with parchment paper.
  2. Mix oat flour, almond flour, coconut sugar, baking powder, baking soda, and vanilla in a bowl.
  3. Combine almond milk and apple sauce in a separate bowl. Add to dry ingredients and stir until uniform.
  4. Pour into pans and bake for 20–30 minutes, or 40–50 minutes if using one pan. Cool 5 minutes in pan, then fully on rack.
  5. Cut cooled cake into strips (approx. 4.5" x 1").
  6. Blend all cream ingredients until smooth. Adjust sweetness to taste.
  7. Pour hot water over chaga to create soak.
  8. Layer cake strips in pan, drizzle with chaga tea, spread half the cream. Repeat layers. Cover and refrigerate 4–5 hours or overnight.
  9. Dust with carob and chaga before serving.
